Ingredients for Chicken Fritters:
1 1/2 lbs chicken breasts (3 large)
2 eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour (substitute with cornstarch or potato starch for gluten-free)
4 oz mozzarella cheese (1 1/3 cups shredded)
1 1/2 Tbsp fresh dill (chopped)
1/2 tsp salt (adjust to taste)
1/8 tsp black pepper
2 Tbsp light olive oil (or any high-heat oil)
Ingredients for Optional Garlic Aioli Dip:
1/3 cup mayonnaise
1 garlic clove (pressed)
1/2 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
How to Prepare:
Prep Chicken: Dice the chicken breasts into 1/3″ thick pieces. (Tip: Slicing is easier if the chicken is partially frozen).
Mix: In a large bowl, combine chicken with eggs, mayonnaise, flour, mozzarella, dill, salt, and pepper. Mix well. Refrigerate the mixture for at least 2 hours.
Cook Fritters: Heat oil in a non-stick pan over medium heat. Drop heaping tablespoons of the chicken mix into the pan, flattening slightly. Cook each side for 3-4 minutes or until golden brown and fully cooked inside.
Aioli Dip: Mix all aioli ingredients until smooth.
Note: Ensure the chicken is fully white inside before serving. Adjust heat if fritters brown too quickly.
